Perfect Summer Recipe

Sun is out, essays are submitted, and summer has begun. As the Dutch weather (finally) begins to get better, it's time to try out some new seasonal recipes. Here is an easy and healthy dish you can try out at home.

Sweet Potato Gnocchi

A year ago, my sister and I created our own food blog where we discovered healthy and original bites from around the world. One such dish, was sweet potato gnocchi. Growing up, pasta was always a family-favorite at home. However, because it was summer and we were in search of a healthier alternative, using sweet potatoes to create our gnocchi was extremely appealing. Although our first attempt at creating this homemade pasta was not as successful, the second time worked much better. The sweet potato brought a delicate sweet and healthy twist to the recipe. The potatoes are also rich in fibers, vitamins, and minerals. These smooth little orange dumplings melted in our mouths. If you are curious to try them out, here is the recipe:

- 2 sweet potatoes
- 300g flour (we used whole-wheat flower)
- 1 egg yolk
- Salt/pepper

1. Peel and chop your sweet potatoes into small cubes. Boil the sweet potatoes in salted water until cooked (around 20min.)
2. Remove the sweet potato from the water and mash until smooth. Add in the egg yolk and a pinch of salt and pepper. Mix well.
3. Add in the flower bit by bit, mixing the batter well (we recommend using your hands so you can fold the dough well). Make sure the batter does not stick to your fingers, if not, add more flour into the mixture!
4. Using your hands, pick a teaspoon worth of dough and roll it into a small ball. Make sure these balls of dough are not too large so that they cook thoroughly. Using a fork, press down on the gnocchi to create a more elongated shape.
5. Place the gnocchi into a pot of boiling water for 4-5 minutes, or until the gnocchi rise to the surface of the water.
6. When the gnocchi are cooked, drain the water and serve with your preferred sauce (we recommend a traditional tomato sauce or a butter/sage sauce!).
